Gingerbread Cookies
Ingredients
- 2/3 cup shortening
- 2/3 cup brown sugar
- 2/3 cup molasses
- 1 egg
- 1/2 teaspoon baking soda
- 2 teaspoons water
- 1 teaspoon ground ginger
- 1/2 teaspoon allspice
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 4 – 4 1/2 cup flour (3 cups in mixer and add as needed when rolling dough)
Instructions
Combine all ingredients except flour. Add 2 cups of flour & beat until well blended. Stir in enough flour to form stiff dough. Divide dough in half & wrap unused portion in saran wrap and refrigerate until needed. Roll out one-half of the dough at a time on a floured surface to ¼ inch thickness. Cut dough with desired festive cookie cutters. Bake on parchment paper lined cookie sheet at 350 degrees for 10-12 minutes. Decorate as desired!
